Ingredients:

  • 1 whole chicken
  • Salt
  • Pepper
  • Olive oil
  • Herbs (such as thyme or rosemary)
  • Garlic (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken inside and out with cold water and pat it dry with paper towels.
  3. Rub the chicken with olive oil and sprinkle salt and pepper all over it, inside and out.
  4. If you like, stuff the chicken cavity with herbs and garlic.
  5. Tie the legs together with kitchen twine.
  6. Place the chicken in a roasting pan, breast side up.
  7. Roast the chicken for about 1 hour and 20 minutes, or until the internal temperature of the thickest part of the chicken reaches 165°F (74°C).
  8. Let the chicken rest for 10-15 minutes before carving and serving.
